Wild Rice Sno Pea And Pineapple Salad Recipe

Main Ingredients
- 1 cup wild rice
- 2 cups water
- 1 cup sno peas, trimmed and halved
- 1 cup pineapple chunks
- ¼ cup red onion, finely chopped
- ¼ cup cilantro, chopped
- 2 tablespoon olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Rinse wild rice under cold water.
In a pot, bring water to a boil, add wild rice, reduce heat, cover, and simmer for 45 minutes or until rice is tender.
Drain any excess water and let the rice cool.
Blanch sno peas in boiling water for 1-2 minutes, then transfer to ice water to stop cooking.
In a large bowl, combine wild rice, sno peas, pineapple, red onion, and cilantro.
In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
Pour dressing over salad and toss to combine.
