  • 2 cups water
  • 1 medium butternut squash peeled and diced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup pomegranate seeds
  • ¼ cup fresh parsley chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Cook wild rice according to package instructions.
  3. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine cooked wild rice, roasted butternut squash, pomegranate seeds, and parsley. Mix well.
