  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 large sweet potato peeled and cubed
  • 1 large apple chopped
  • 2 tablespoon olive oil
  • 1 teaspoon cinnamon
  • 1 pinch salt

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cubed sweet potatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with a pinch of salt. Roast for 25-30 minutes or until tender.
  3. While the sweet potatoes are roasting, cook the quinoa. In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
  4. In a mixing bowl, combine the cooked quinoa, roasted sweet potatoes, chopped apple, remaining olive oil, and cinnamon. Mix well.
  5. Serve warm or at room temperature.
