Ingredients

  • 1 cup Polenta cooked
  • 1 cup Bell peppers diced
  • 1 cup Onions diced
  • 2 cloves Garlic minced
  • 4 Eggs
  • 2 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Heat the cast iron skillet over the campfire and add olive oil.
  2. Add diced onions and bell peppers. Cook until softened.
  3. Add minced garlic and cook for another minute.
  4. Stir in the cooked polenta and mix well.
  5. Make four wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
  7. Season with salt and black pepper to taste. Serve hot.
