Ingredients

  • 2 lbs yuca peeled and cut into chunks
  • ¼ cup olive oil
  • 3 cloves garlic minced
  • ¼ cup lime juice freshly squeezed
  • ¼ cup orange juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon fresh cilantro chopped

Instructions 

  1. 1. Boil yuca in a pot of salted water until tender, about 20-25 minutes. Drain and set aside.
  2. 2. In a mixing bowl, whisk together olive oil, minced garlic, lime juice, orange juice, salt, and black pepper.
  3. 3. Toss the cooked yuca with the citrus garlic dressing until well coated.
  4. 4. Garnish with chopped fresh cilantro before serving.
